LAYER CAKE

Ingredients

Ingredients:
  • 300 grams Rice Flour
  • 150 grams Tapioca Flour
  • 200 grams Granulated Sugar
  • 2.5 grams Salt
  • 1200 ml Coconut Milk (Medium Thickness)
  • Vegetable oil/cooking oil to taste

Equipment:
  • Scales
  • Mixing Bowls
  • Whisk
  • Square Baking Pan
  • Filter
  • Steamer
  • Stove

The Steps

1. Bring the coconut milk and salt to a boil, using medium low heat while continuing to stir.
2. Set aside the coconut milk to cool.
3. Combine rice flour, tapioca flour and granulated sugar in a container, stir using a whisk.
4. Add cold cooked coconut milk little by little while stirring until there are no lumps
5. Strain the mixture, and divide it into several parts.
6. Add enough food coloring to each dough
7. Grease the baking pan evenly with oil.
8. Pour 80-100 ml of the first mixture into the baking dish and spread evenly.
9. Steam the mixture for 10 minutes. (The steamer has been preheated)
10. Pour 60 ml of the second mixture into the baking dish and spread evenly
11. Steam the mixture for 10 minutes.
12. Do the same activity until the dough runs out.
13. Last layer, steamed for 25 minutes.
14. Remove the cake from the steamer, and let it cool at room temperature (± 5 hours)
15. Comb the edges of the cake so that it is easy to remove from the mold.
16. Cut the layer cake according to taste, and ready to serve.

Notes:
  1. Make sure the steamer is really hot, and cover the steamer with a cloth
  2. Make sure the cake is completely cool before removing it
